Rolled Sugar
Cookies
INGREDIENTS
1 ½ cups unsalted butter, at room temperature
2 ¼ cups white sugar
4 eggs, at room temperature
1 ½ t. pure vanilla extract
5 cups unbleached all-purpose flour
1 t. baking powder
½ t. salt
DIRECTIONS
- In a large bowl, cream together butter and sugar until smooth.
- Beat in eggs and vanilla.
- Stir in flour, baking powder and salt.
- Divide dough into 4 balls and flatten into discs. Wrap each disc with plastic wrap and chill for at least 1 hour or overnight.
- Preheat oven to 400o F. Roll out dough on floured surface ¼” to ½” thick. Cut into shapes. Place cookies 1” apart on ungreased cookie sheet.
- Bake 7-10 minutes depending on thickness and size. Cool.
Royal Icing
INGREDIENTS
2/3 cup warm water
4 ½ T Meringue powder
1 t. cream of tartar
1 t. vanilla
2 pounds powdered sugar
DIRECTIONS
- In bowl of electric mixer, whisk together water and meringue powder for 15 seconds (with a whisk, not the mixer).
- Whisk in cream of tartar and vanilla.
- Add powdered sugar all at once and mix with paddle attachment for 10 minutes.
- Cover tightly and thin/color as needed.
